Grilled salmon kebabs

Servings 2 persons, Preparation time 35 minutes, Cooking time: 10 minutes Ingredients 50g young ginger 50g garlic, peeled 4 pcs coriander root 5g mint leaf 1 tsp chilli powder 1 tbs kosher salt lemon juice x ½ lemon 170ml yogurt 8 pcs salmon cubes 1.5 inches thick 8 nos cherry tomatoes 1 tsp salt 1 tsp oil satay skewers 1 wedge of lemon 1 lime Directions Begin by creating the spice paste by placing all the ingredients into the blender except for the yogurt. Once the vegetables are blended, add the yogurt and mix till fully incorporated. Pat salmon dry and place in the marinade. Season tomatoes in a bowl with 1 tsp of oil and a pinch of salt. Place salmon and tomatoes alternately on skewers. Place in the Viva Collection Airfryer at 200 degrees with a grill attachment. Cook for 8 mins and rotate it half way to sear all sides. Serve on a plate and garnish with fresh chopped coriander and a wedge of lemon and some zested lime.
